The food of this region of Asia is simply bursting with the flavours and zest of fresh herbs, spices and fruits. Northern Australia is the perfect location for growing and experiencing these ingredients as the moderate tropical climate, abundant rainfall and fertile soils enable most Asian fruits and vegetables to thrive.
Lime juice is an essential ingredient in Lao food and balances beautifully with the native rainforest lemon (lemon aspen) of northern Australia which is incorporated into several of the recipes for this class including fresh spring rolls, organic chicken laap and green papaya salad.
Pork is a traditional ingredient in Laos and Thailand for special occasions and local free range organic pork is combined with native rainforest plums (davidsons plum) to produce a sensational stir-fry which is very simple to prepare and cook. Palm sugar sweetened sticky rice and coconut milk create the perfect combination with seasonal tropical fruit to finish the meal.
Local musicians will serenade you as you taste new sensations and afterwards, delight in the rare bird-life and try your eye spotting platypus and tree kangaroos. Bookings are essential for this sensational day out and numbers are limited. The lunches will be held on the last Sunday of the month.
